Rhubarb Cake

Ingredients

  • 1 1/2 cup packed brown sugar
  • 1/2 cup shortening
  • 1 cup sour cream or butter milk
  • 1 egg
  • 2 cups flour
  • 2 cups diced rhubarb
  • 1/2 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon

Instructions

  1. Cream brown sugar & shortening, then add egg.
  2. Sift together flour, salt, and soda. Alternately add small amounts of flour mixture and milk to egg mixture. 
  3. Fold in diced rhubarb. 
  4. Pour into greased 9″ x 13″ pan.
  5. Combine sugar and cinnamon and sprinkle on top of cake batter. 
  6. Bake in 350 degree oven for 35-40 minutes. Serve with whipped cream or ice cream.

Strawberry Rhubarb Bars

Ingredients: 

1 1/2 Cups quick cooking rolled oats
1 Cup flour
1/2 Cup sugar
3/4 Cup Butter (12 Tablespoons)
1 1/2 Cup chopped Rhubarb
1/4 Cup sugar
1/4 Cup water
2 Cups chopped Strawberries

Instructions: 

  • Preheat oven to 350 F
  • Butter 8 X 8 X 2 Glass dish
  • Stir together oats, flour and sugar.
  • Cut in butter using fork or pastry blender mix until crumbs form. Set aside 2 Cups for topping.
  • Press remaining crumb mixture into bottom of pan.  Bake for 20 minutes. **all to completely cool**
  • In a saucepan combine rhubarb, sugar and water. Cook and stir for 8 to 10 minutes until thickened and bubbly.
  • Stir in chopped strawberries. Pour over cooled baked crust
  • Sprinkle reserved crumbs evenly over top press down lightly on crumbs
  • Bake for 30 – 35 minutes or until top is golden brown and filling is bubbly.

Apple Walnut Cake Recipe

Ingredients:

1 cup butter or margarine
2 cups sugar
3 eggs
3 cups sifted flour
1 1/2 teaspoons baking soda
1/2 teas salt
2 teas cinnamon
1/4 teas mace
1 teas vanilla
2 cups walnuts, chopped
3 cups apples, chopped

Instructions:

  • Cream butter and sugar until fluffy.
  • Add eggs, one at a time, beating well.
  • Mix and sift flour, baking soda, salt, cinnamon, & mace; add gradually.
  • Stir in vanilla, apples and walnuts.
  • Batter will be stiff. Spoon into greased & floured tube pan.
  • Bake at 325 for 90 mins.
  • Let cool in pan 10 mins.
  • Remove to rack.

Applesauce Bread (Sugar-Free)

Ingredients

1 1/4 cup flour sifted
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup quick oats
1/2 cup raisins
1 1/4 cup applesauce
1/3 cup oil
2 large eggs
1/4 cup milk

Instructions

  • Preheat oven to 350
  • Sift dry ingredients together in large bowl
  • Stir in oats & raisins
  • Beat applesauce, oil, eggs and milk together, make a well in center
  • Pour applesauce mixture into well and stir only until moistened
  • Pour into greased 9″ X 5″ X 3″ loaf pan
  • Bake 55-60 mins

Apple Pie (Sugar-Free)

Ingredients

1 (12 oz) can frozen apple juice concentrate, thawed
3 TBSP cornstarch
1/4 teas salt
2 teas cinnamon
1/2 teas nutmeg
6 large Apples, peeled, cored and sliced 1/4 thick
2 TBSP firm butter or margarine
9″ baked pastry shell (1 1/2″ deep)

Instructions

In 2 qt bowl stir together apple juice, cornstarch, salt, cinnamon & nutmeg blend well. Stir in apples. Dot with butter. cover
with wax paper. Microwave on High for 8 mins (stir after 4 mins) Uncover, Microwave on High for 8 mins (stir after 4 mins)
Apple slices should be fork tender, let cool 30 mins before spooning into baked pastry shell. Refrigerate prior to serving.
Serve with whipped cream or cool whip if desired.
